He graduated from Newport Harbor High School in 1963 and went on to attend San Diego City College, Cypress Junior College, Chapman College, and finally Los Angeles Valley College, where he earned an Associate of Arts degree.
Le Mat flew an SP-5B Marlin aircraft in a maritime patrol squadron for the US Navy during the Vietnam War.

In 1973, Le Mat appeared in the pilot episode of Firehouse. He starred in American Graffiti (released in 1973), a coming-of-age picture about a group of friends in Modesto, California in the early 1960s, in 1972.
He played John Milner, which earned him his first Golden Globe nomination. The film earned widespread praise and was a box-office success.
Le Mat also appeared in Floyd Mutrux’s 1975 murder thriller Aloha, Bobby and Rose, which was a commercial success.
He appeared in Jonathan Demme’s famous comedy Citizens Band, eventually retitled Handle with Care, in 1977.
